The blade is full carbon steel, powder-coated black to fight rust and take a beating, hardened to a 58 to 60 HRC edge that bites in and holds. Eight inches of tall, sweeping steel gives you the mass to power through and the wide belly to rock, slice, and cleave in one motion. This is the do-everything blade with the muscle to back it up. The tall face doubles as a scoop to sweep your board clean straight into the pan.
